Going Vegan

I never thought I would see the day that I would go vegan, but I decided to make the leap.  It is going to be challenging in the beginning since I love butter and whole milk fresh off the farm.  I also enjoy eggs but I want to rid my body of all animal products.  I believe that in the long run I will be healthy and eczema will no longer be an issue for me.  Eczema seeming came out of the blue back in 1999 and the first 10 years of dealing with it was a long horrible nightmare that I would never wish on anyone.  Prior to 1999 I had never ever had a skin problem.  I had beautiful smooth dark brown skin.

My skin has cleared up immensely over the past 3 years but I want to make sure that I never go through again what I went through for 10 years dealing with eczema (atopic dermatitis).


 I am part of a workshop right now about creating your best life.  We have guest speakers on our calls every Monday night and the author of these two cookbooks, Lindsay Nixon, was our guest speaker a few weeks ago.  I purchased both books online and look forward to preparing delicious vegan meals.  I am from Panama, so I grew up eating the tastiest foods.  I do not want to give that up and do not think I should have to just to eat healthier.  I think what turns a lot of people off from becoming vegetarian or vegan is that they have not tasted plant based foods that are just as delicious and satisfying.  I have had very delicious vegan meals before so I know that it is possible to be vegan or vegetarian and thoroughly enjoy your meals.  No one wants to sit down to a meal and feel like they are eating cardboard.

Xenia, though I am not vegan I eat vegan many days. Or vegetarian. In an ideal world I would be vegan, but my husband does not thrive on a vegan, or even vegetarian, diet and it is just too much work to cook two different diets every day. Though I'm an omnivore, I feature many vegan, vegetarian and gluten-free recipes on my comfort food blog. When you're missing your dairy products, you might want to try my vegan chocolate ice cream!
